Steps
  1. Preheat your oven to 425°F (220°C) and lightly grease a baking dish with olive oil.
  2. Pat your skinless salmon fillets dry with paper towels. In a bowl, mix lemon juice, olive oil, minced garlic, Dijon mustard, salt, and pepper. Rub this mixture over the salmon fillets and marinate briefly.
  3. Place the salmon fillets into the greased baking dish and bake for 10-12 minutes until they flake easily with a fork and reach 145°F (63°C).
  4. While the salmon is baking, melt butter in a saucepan over low heat. Add chicken stock, stir, and whisk in the Boursin cheese until smooth.
  5. Let the sauce simmer for 5 minutes, stirring frequently. Add a splash of lemon juice and adjust seasoning as needed.
  6. Transfer cooked salmon to plates, drizzle with the creamy sauce, and garnish with parsley before serving.
