Ingredients
  

For the Blueberry Jam
  • 2 cups Frozen Wild Blueberries Fresh berries can be used when in season.
  • 1/2 cup Water Fruit juice can be used for flavor.
  • 3 tablespoons Iswari Chia Seeds Other chia seeds can be substituted.
  • 2 tablespoons Agave Syrup Honey or maple syrup can be alternatives.
For the Lemon Chia Pudding
  • 1/2 cup Iswari Chia Seeds Can substitute with flaxseeds.
  • 1 whole Juice of Lemon Lime juice is a good substitute.
  • 1 whole Zest of Lemon Fresh zest is recommended.
  • 2 cups Almond Milk Any plant-based milk can be used.
  • 2 tablespoons Agave Syrup Adjust for sweetness.
  • 1 teaspoon Ground Turmeric Can be omitted if preferred.
For the Mango Nicecream
  • 2 cups Frozen Mango Fresh mango can also be used.
  • 1/2 whole Juice of Lemon Lime juice is a great substitute.
  • 1 cup Almond Milk Any nondairy milk works great.
  • 1 cup Soya or Coconut Yoghurt Use preferred dairy-free yogurt.
  • 1 cup Frozen Mango Chunks For garnishing.
  • 1/2 cup Fresh Blueberries For garnishing.
  • 1/4 cup Freeze-dried Raspberries For garnishing.

Method
 

Prepare the Blueberry Jam
  1. In a medium saucepan, combine 2 cups of frozen wild blueberries and 1/2 cup of water over medium heat. Stir occasionally until bubbling and the blueberries burst, about 5 to 7 minutes.
  2. Mash the berries with a fork to release more juice for flavor.
Thicken the Jam
  1. Stir in 3 tablespoons of Iswari chia seeds and 2 tablespoons of agave syrup. Cook on low heat for 2 to 3 minutes until thickened.
  2. Let it cool before layering into jars.
Make the Lemon Chia Pudding
  1. In a bowl, whisk together 1/2 cup of Iswari chia seeds, the juice and zest of 1 lemon, 2 cups of almond milk, and 2 tablespoons of agave syrup. Mix thoroughly.
  2. Let it rest for 5 to 10 minutes to thicken, stirring occasionally.
Layer the Ingredients
  1. Spoon a layer of lemon chia pudding into each jar, filling about a third of the way. Follow with a layer of blueberry jam.
Chill and Serve
  1. Seal the jars and refrigerate for at least 1 hour before serving.
  2. Top with fresh blueberries or freeze-dried raspberries before enjoying.
