Prepare the Blueberry Jam
- In a medium saucepan, combine 2 cups of frozen wild blueberries and 1/2 cup of water over medium heat. Stir occasionally until bubbling and the blueberries burst, about 5 to 7 minutes.
- Mash the berries with a fork to release more juice for flavor.
Thicken the Jam
- Stir in 3 tablespoons of Iswari chia seeds and 2 tablespoons of agave syrup. Cook on low heat for 2 to 3 minutes until thickened.
- Let it cool before layering into jars.
Make the Lemon Chia Pudding
- In a bowl, whisk together 1/2 cup of Iswari chia seeds, the juice and zest of 1 lemon, 2 cups of almond milk, and 2 tablespoons of agave syrup. Mix thoroughly.
- Let it rest for 5 to 10 minutes to thicken, stirring occasionally.
Layer the Ingredients
- Spoon a layer of lemon chia pudding into each jar, filling about a third of the way. Follow with a layer of blueberry jam.
Chill and Serve
- Seal the jars and refrigerate for at least 1 hour before serving.
- Top with fresh blueberries or freeze-dried raspberries before enjoying.
