Cooking Steps
- Heat a large skillet over medium heat and add the olive oil. Once the oil shimmers, add the ground chicken, cooking for 5-7 minutes until browned.
- Stir in the chopped onion and sauté for 3-4 minutes until translucent. Add minced garlic and Cajun seasoning, stirring for 1 minute.
- Mix in the tomato paste and cook for an additional 2 minutes. Pour in the chicken broth and tomato sauce, along with Worcestershire sauce, then simmer uncovered for 8-10 minutes until thickened.
- In a separate saucepan, melt butter and whisk in flour for 1 minute to create a roux, then gradually whisk in milk, cooking for 4-5 minutes until thickened.
- Lower the heat and fold in shredded cheddar cheese and paprika. Stir until cheese melts completely and the sauce is smooth. Season with salt to taste.
- Toast the inside of brioche buns on a griddle until golden brown, about 2-3 minutes.
- Assemble the sloppy joes by spooning the chicken filling onto the bottom bun, drizzling cheese sauce on top, and adding freshly ground black pepper.
- Serve immediately and enjoy the flavors.
