Cooking Steps
  1. Heat a large skillet over medium heat and add the olive oil. Once the oil shimmers, add the ground chicken, cooking for 5-7 minutes until browned.
  2. Stir in the chopped onion and sauté for 3-4 minutes until translucent. Add minced garlic and Cajun seasoning, stirring for 1 minute.
  3. Mix in the tomato paste and cook for an additional 2 minutes. Pour in the chicken broth and tomato sauce, along with Worcestershire sauce, then simmer uncovered for 8-10 minutes until thickened.
  4. In a separate saucepan, melt butter and whisk in flour for 1 minute to create a roux, then gradually whisk in milk, cooking for 4-5 minutes until thickened.
  5. Lower the heat and fold in shredded cheddar cheese and paprika. Stir until cheese melts completely and the sauce is smooth. Season with salt to taste.
  6. Toast the inside of brioche buns on a griddle until golden brown, about 2-3 minutes.
  7. Assemble the sloppy joes by spooning the chicken filling onto the bottom bun, drizzling cheese sauce on top, and adding freshly ground black pepper.
  8. Serve immediately and enjoy the flavors.
