  • 1 cup enchilada sauce homemade can be used
  • 1/2 cup sour cream Greek yogurt can be a substitute
  • 1/4 cup fresh cilantro, chopped optional for garnish

Method
 

Step‑by‑Step Instructions
  1. In a large skillet, heat olive oil over medium heat. Sauté onion and garlic for 3-4 minutes until softened.
  2. Add ground beef, cooking until browned, about 6-8 minutes. Drain excess fat.
  3. Stir in black beans, diced tomatoes, and taco seasoning. Simmer for 5-7 minutes.
  4. In a large pot, bring salted water to boil. Cook cheese tortellini according to package instructions, about 3-5 minutes.
  5. Combine beef mixture with cooked tortellini in a mixing bowl. Layer in a greased baking dish with enchilada sauce and cheddar cheese.
  6. Preheat oven to 350°F (175°C). Cover and bake for 20 minutes. Remove foil and bake for another 10 minutes until cheese is melted.
  7. Let sit for a few minutes before serving. Top with sour cream and cilantro if desired.
