- In a large skillet, heat olive oil over medium heat. Sauté onion and garlic for 3-4 minutes until softened.

- Stir in black beans, diced tomatoes, and taco seasoning. Simmer for 5-7 minutes.
- In a large pot, bring salted water to boil. Cook cheese tortellini according to package instructions, about 3-5 minutes.
- Combine beef mixture with cooked tortellini in a mixing bowl. Layer in a greased baking dish with enchilada sauce and cheddar cheese.
- Preheat oven to 350°F (175°C). Cover and bake for 20 minutes. Remove foil and bake for another 10 minutes until cheese is melted.
