Dough
  • 4 cups all-purpose flour
  • ¼ cup sugar for the dough
  • 1 teaspoon kosher salt
  • 1 cup milk warmed to 100-110°F
  • 2 ¼ teaspoons active dry yeast
  • 2 eggs beaten
  • ½ cup butter very soft
Glaze
  • as needed sugar syrup for finishing

Method
 

Preparation
  1. Soften cream cheese and blend with sugar, vanilla, and almond extract. Divide and tint with food coloring.
  2. In a bowl, combine flour, sugar, and salt. Warm milk, sprinkle yeast, and mix with eggs, then combine with flour.
  3. Knead the dough until smooth, incorporating butter. Shape into a ball, place in a greased bowl, cover.
  4. Let dough rise until doubled in size; optionally, refrigerate overnight for better flavor.
  5. Roll the dough into a rectangle and spread the cream cheese filling evenly over it.
  6. Roll the dough, slice it open, and twist to form a braided shape. Place in a loaf pan to rise.
  7. Preheat oven and bake for 30-40 minutes or until golden brown with an internal temperature of 185-190°F.
  8. Brush the warm babka with sugar syrup and let cool before serving.
