- Season the beef chuck roast generously with salt, black pepper, and garlic powder. Let it sit for about 10 minutes.
- Slice the large onion thinly and layer at the bottom of the slow cooker. Place the seasoned beef roast on top.
- Combine beef broth, brown gravy mix, and Worcestershire sauce in a bowl. Pour it over the roast.
- Cover and cook on low heat for about 8 hours until fork-tender.
- If you prefer a thicker gravy, whisk together cornstarch and cold water and stir it into the hot gravy for an additional 10-15 minutes.
- Shred the beef with two forks, mix it with the gravy, and serve over prepared mashed potatoes.
