- Season the chicken by patting it dry and sprinkling with salt and pepper.
- In a large pot, heat a tablespoon of oil over medium-high heat and sear the chicken for 2-3 minutes on each side until golden brown. Transfer to a plate.
- Sauté the diced onion in the same pot for about 3-4 minutes until translucent. Add minced garlic and jalapeño (if using) and sauté for another minute.
- Stir in the diced green chiles and spices, allowing them to sauté for about 1 minute.
- Return the seared chicken to the pot, add the beans, sweet corn, and broth, stirring gently to combine. Bring to a gentle simmer.
- Cover and let simmer for 15-20 minutes until chicken is cooked through.
- Remove chicken and shred into bite-sized pieces. Return to the pot.
- Lower heat and stir in sour cream and cheese until melted.
