For Spice and Seasoning
  • 1 medium Jalapeño Optional; seed and dice to control heat.

Step-by-Step Instructions
  1. Season the chicken by patting it dry and sprinkling with salt and pepper.
  2. In a large pot, heat a tablespoon of oil over medium-high heat and sear the chicken for 2-3 minutes on each side until golden brown. Transfer to a plate.
  3. Sauté the diced onion in the same pot for about 3-4 minutes until translucent. Add minced garlic and jalapeño (if using) and sauté for another minute.
  4. Stir in the diced green chiles and spices, allowing them to sauté for about 1 minute.
  5. Return the seared chicken to the pot, add the beans, sweet corn, and broth, stirring gently to combine. Bring to a gentle simmer.
  6. Cover and let simmer for 15-20 minutes until chicken is cooked through.
  7. Remove chicken and shred into bite-sized pieces. Return to the pot.
  8. Lower heat and stir in sour cream and cheese until melted.
  9. Serve hot, garnished with cilantro and optionally additional sour cream or cheese.
