- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Unroll the thawed puff pastry onto a lightly floured surface and smooth out any wrinkles.
- Spread a thin layer of cranberry sauce over the puff pastry, leaving about half an inch around the edges.
- Slice the brie cheese and arrange over the cranberry sauce. Sprinkle with fresh thyme leaves.
- Slice the pastry into eight equal strips, fold in half, and twist several times. Pinch the ends.
- Beat an egg and brush it generously over the tops of the twists.
- Bake in the preheated oven for 18–22 minutes or until golden brown.
- Remove from oven and drizzle with honey if desired. Serve warm.
