  • 2 tablespoons Chopped fresh parsley For garnish.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, add olive oil and sauté fresh cranberries for about 5 minutes until tender.
  3. Stir in honey, orange juice, ground cinnamon, ginger, salt, and black pepper. Cook for an additional 3-4 minutes.
  4. Remove from heat and let the mixture cool for a few minutes.
  5. Cut a pocket in each chicken breast. Fill with the cooled cranberry mixture and chunks of brie.
  6. In a skillet, sear the stuffed chicken breasts for 2-3 minutes on each side until golden brown.
  7. Combine melted butter with panko breadcrumbs for the topping and sprinkle over the chicken.
  8. Transfer to the preheated oven and bake for 20-25 minutes until the internal temperature reaches 165°F (74°C).
  9. Let it rest for 5 minutes before garnishing with fresh parsley.
