  • 2-3 cloves Garlic minced
  • 1 cups Cooking Water reserve from pasta
  • to taste Chili Flakes optional

Method
 

Step-by-Step Instructions
  1. Bring a large pot of salted water to a vigorous boil and cook pasta according to package instructions until al dente. Reserve about a cup of pasta cooking water before draining.
  2. Heat olive oil in a skillet over low heat. Add minced garlic and optional chili flakes, sautéing for 2-3 minutes until fragrant and slightly golden.
  3. Stir in cream cheese and half a cup of reserved pasta water into the skillet. Mix until smooth and creamy, then add grated parmesan.
  4. Add drained pasta to the skillet and toss gently into the creamy sauce, adjusting the consistency with more reserved water if needed.
  5. Plate and drizzle with extra olive oil if desired. Sprinkle with freshly grated parmesan and cracked black pepper before serving.
