Step-by-Step Instructions
- Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish with butter.
- Cook the pasta in salted boiling water for 2 minutes less than package instructions. Drain and toss with olive oil.
- In a saucepan, melt 1/4 cup of butter. Whisk in 1/4 cup of flour and cook for about 1 minute until light golden brown.
- Gradually pour in 2 cups of milk and 1 cup of half-and-half, stirring continuously for 6-8 minutes until thickened.
- Mix in 1 tsp of black pepper, nutmeg, garlic powder, and mustard, then add sharp cheddar, white cheddar, and Gruyère cheese until melted.
- Pour the cheese sauce over the cooked macaroni and stir until coated.
- Transfer mixture to the baking dish. Mix 1 cup of panko with 2 tbsp melted butter, and sprinkle on top.
- Bake for 20 minutes until golden. Optionally broil for 2-3 minutes for extra crispiness.
- Cool for 10 minutes before serving to allow flavors to meld.
