  • ½ small Onion, diced or 2 tbsp dried onion if fresh is unavailable
  • 8 oz Chicken Broth opt for low-sodium for a lighter touch
  • 8 oz Whole Milk or heavy cream for richness
  • ½ tsp Paprika smoked paprika is ideal for richness
  • ¼ tsp Salt adjust to taste
  • ¼ tsp Pepper adjust to taste
  • 4 oz Sharp Cheddar Cheese, grated can use Monterey Jack or Pepper Jack

Method
 

Cheesy Rice Instructions
  1. Begin by rinsing the rice in a fine mesh sieve under cool running water until it runs clear.
  2. In a medium saucepan, melt the butter over medium heat and sauté the diced onion until softened.
  3. Add the rinsed rice to the saucepan, stirring with the onions. Then add broth, milk, paprika, salt, and pepper.
  4. Increase the heat until the mixture simmers, then cover and reduce the heat to low. Cook undisturbed for 18-20 minutes.
  5. After 18-20 minutes, let it sit for an additional 5 minutes without lifting the lid.
  6. Fluff the rice with a fork and stir in the cheddar cheese until melted and creamy.
