- Begin by bringing a large pot of salted water to a rolling boil. Once boiling, add pasta and cook until al dente, about 7-9 minutes. Drain the pasta and reserve about a cup of the starchy pasta water.
- In the same pot, melt unsalted butter over medium heat. Whisk in flour and cook for 1-2 minutes. Gradually pour in heavy cream while whisking. Add Boursin cheese and white cheddar, stirring until melted and creamy.
- Add the cooked pasta to the cheese sauce, stirring gently to coat. Let it sit for 2-3 minutes to absorb some sauce.
- In a separate skillet, melt remaining butter over medium heat. Add breadcrumbs, stirring for 3-5 minutes until golden brown.
