  • 8 oz Pasta Spaghetti or fettuccine recommended
For the Sauce
  • 2 tbsp Olive Oil Extra virgin recommended
  • 3 cloves Garlic Minced
  • 1 cup Ricotta Cheese
  • 1/2 cup Parmesan Cheese Freshly grated
  • 1 whole Lemon Zest and juice
  • 1 tsp Salt Kosher or sea salt recommended
  • 1/2 tsp Black Pepper Freshly cracked
For the Finishing Touches
  • 1/4 cup Pasta Water Reserved from pasta cooking
  • 1/4 cup Fresh Basil Chopped, or use dried as substitute

Method
 

Cooking Steps
  1. Boil a large pot of salted water and add pasta. Cook until al dente, about 8-10 minutes.
  2. In a skillet, heat olive oil over medium heat and sauté minced garlic for about 1 minute.
  3. Reduce heat and stir in ricotta cheese, mixing until smooth and creamy.
  4. Add grated Parmesan cheese, stirring until melted and fully incorporated.
  5. Zest and juice the lemon into the skillet, mixing thoroughly.
  6. Season with salt and pepper to taste.
  7. Reserve 1/4 cup of pasta water before draining. Add drained pasta to the skillet.
  8. Toss the pasta with the ricotta sauce over medium heat.
  9. Add reserved pasta water gradually until desired sauce consistency is reached.
  10. Fold in chopped basil before serving.
