  • 12 ounces Penne Pasta or rotini or rigatoni
For the Meat
  • 1 pound Ground Beef or thinly sliced ribeye
For the Vegetables
  • 8 ounces White Button Mushrooms or Cremini mushrooms
  • 1 medium Onion yellow or sweet onion
  • 1 medium Green Bell Pepper or colored bell peppers
For the Sauce
  • 10.5 ounces Condensed French Onion Soup substitute with beef broth and sautéed onions
  • 2 tablespoons Worcestershire Sauce for depth of flavor
  • 1 cup Cold Water
  • 1 tablespoon Cornstarch or adjust with flour
For the Cheese
  • 8 ounces Provolone Cheese or mozzarella, or cheddar
  • 8 ounces Mozzarella Cheese combine with pepper jack for a kick
For Seasoning
  • to taste Kosher Salt
  • to taste Freshly Ground Black Pepper

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. In a large pot, bring salted water to a boil. Add the penne pasta and cook until al dente, about 9-11 minutes. Drain, reserving a cup of pasta water.
  3. In a large ovenproof skillet over medium heat, cook the ground beef until browned, about 5-7 minutes, breaking it apart. Add mushrooms, onion, and bell pepper, sauté for 4-5 minutes.
  4. Stir in the condensed French onion soup and Worcestershire sauce, mix for about 2 minutes to combine.
  5. Mix cold water with cornstarch until smooth, add to the skillet while stirring continuously. Let it simmer for about 5 minutes until thickened.
  6. Add the drained penne pasta to the skillet and toss until well-coated. If too thick, add reserved pasta water to reach desired consistency.
  7. Top with provolone and mozzarella cheese, then bake for 15 minutes until cheese is melted and golden.
