Step‑by‑Step Instructions
  1. Soak the cashews in water for 6-8 hours, then drain and pat dry.
  2. Slice the red bell pepper, and roast it at 400°F (200°C) for 20-25 minutes.
  3. Blend the soaked cashews, water, red bell pepper, nutritional yeast, salt, onion powder, turmeric, and nutmeg until smooth.
  4. Heat the blended sauce in a medium pot over medium heat for 5-7 minutes.
  5. Cook the pasta according to package instructions (8-10 minutes), reserving some pasta water before draining.
  6. Combine drained pasta with the warm sauce, adding a splash of reserved pasta water if needed, and serve immediately.
