Cooking Steps
- Heat a large skillet over medium heat and add olive oil. Toss in sliced crimini mushrooms, seasoning with salt and pepper. Sauté for about 1-2 minutes until golden brown. Set aside half the cooked mushrooms for garnish.
- In the same skillet, add potato gnocchi, chicken broth, and heavy cream. Include minced garlic, Italian seasoning, smoked paprika, and a pinch of salt. Bring to a gentle boil over medium heat, stirring for about 5 minutes.
- Once the gnocchi is tender, stir in fresh spinach. Cook for an additional 2-3 minutes until spinach wilts down. Adjust cooking time for a thicker sauce.
- Taste and adjust seasoning with salt and pepper. Fold in reserved mushrooms for presentation. Serve warm and enjoy.
