Method

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C). Slice your brioche or challah bread into 1-inch thick pieces and arrange them in a greased baking dish.
  2. In a large mixing bowl, whisk together the eggs, whole milk, heavy cream, granulated sugar, vanilla extract, ground cinnamon, and a pinch of salt until smooth.
  3. Pour the custard mixture over the arranged bread, ensuring every piece gets soaked. Cover with plastic wrap and refrigerate for at least 30 minutes, preferably overnight.
  4. Allow the dish to sit at room temperature for 10 minutes before baking. Adjust the oven rack to the center position.
  5. Place the baking dish in the oven and bake for 25 to 30 minutes until golden brown and firm. Broil for an additional 2 to 3 minutes for a crispy top.
  6. Remove the French toast from the oven and sprinkle a thin layer of granulated sugar on top. Use a kitchen torch or broiler to caramelize the sugar until golden.
  7. Allow to cool for 5 minutes, then slice and serve warm topped with fresh berries, powdered sugar, and maple syrup.
