- Soak each rice paper sheet in warm water for 10-15 seconds until they become pliable. Lay soaked sheets flat on a damp surface.
- On one softened rice paper sheet, layer cooked vermicelli noodles, shredded carrots, chopped cabbage, and your choice of protein.
- Fold in the sides of the rice paper towards the center and roll from the bottom up, ensuring the filling is encased tightly.
- Preheat air fryer to 375°F (190°C) for about 3 minutes. Lightly spray each rice paper roll with oil.
- Place rolls seam-side down in the air fryer basket and air fry for 8-10 minutes until golden brown and crispy.
- Remove rolls from the air fryer and let cool for a minute. Serve immediately with dipping sauces.
