- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Wash the baby potatoes, dry them, and cut each potato in half.
- Chop the bacon into small, bite-sized pieces.
- In a large mixing bowl, combine the halved potatoes, olive oil, garlic powder, smoked paprika, salt, and black pepper. Toss until evenly coated.
- Spread the seasoned potatoes in a single layer on the baking sheet and evenly distribute the chopped bacon over the potatoes.
- Roast in the preheated oven for 30-35 minutes, flipping the potatoes halfway through.
- In the last 5 minutes of roasting, drizzle honey over the potatoes and bacon.
- Remove from the oven when golden brown and sprinkle fresh parsley on top before serving.
