Preparation Steps

  3. Mix the mashed potatoes with freshly grated Parmesan, salt, black pepper, and potato starch. Optionally add parsley.
  4. Divide the mixture, roll out into rectangles, and cut into fry shapes.
  5. Heat oil to 350°F in a pan, fry the potato strips for 5-7 minutes until golden brown.
  6. Remove fries from oil and drain on a wire rack to keep them crispy. Serve hot.
