- Peel and cut 500 grams of potatoes into cubes. Boil in salted water for 15-20 minutes until fork-tender.

- Mix the mashed potatoes with freshly grated Parmesan, salt, black pepper, and potato starch. Optionally add parsley.
- Divide the mixture, roll out into rectangles, and cut into fry shapes.
- Heat oil to 350°F in a pan, fry the potato strips for 5-7 minutes until golden brown.
- Remove fries from oil and drain on a wire rack to keep them crispy. Serve hot.
