Step-by-Step Instructions
  1. Rinse quinoa under cold water, then cook according to package instructions, typically about 15 minutes. Let cool in a large mixing bowl.
  2. Chop vegetables into small pieces, and sauté in a skillet over medium heat with olive oil for 5-7 minutes until tender. Let cool before adding to quinoa.
  3. Mix quinoa, sautéed vegetables, beaten egg, and breadcrumbs or almond flour in the bowl. Add spices, salt, and pepper, and mix until combined.
  4. Form small patties or balls with the mixture, about the size of a golf ball. Press firmly to hold shape and place on a parchment-lined baking sheet.
  5. Bake at 375°F (190°C) for 25 minutes, flipping halfway for even browning. Alternatively, pan-fry in oil for 4-5 minutes on each side until crispy.
