Ingredients
  

For the Beef
  • 1 pound striploin steaks or ground beef
  • 1 teaspoon baking soda optional for tender cuts
  • 3 cloves garlic minced
  • 2 tablespoons soy sauce or tamari/coconut aminos for GF
  • 1 tablespoon sriracha or gochujang for heat
For the Vegetables
  • 1 cup carrots sliced
  • 1 cup zucchini sliced
  • 1 cup shiitake mushrooms sliced
  • 1 cup bean sprouts
  • 2 cups fresh baby spinach
  • 1 cup kimchi optional
For the Base and Toppings
  • 2 cups white rice or brown/cauliflower rice
  • 1 large egg for topping
  • 2 tablespoons sesame oil for cooking and finishing
  • 1 tablespoon butter for cooking rice
  • 1 teaspoon salt for seasoning

Method
 

Cooking Instructions
  1. Cook the rice according to package instructions in a rice cooker for about 15-20 minutes and set aside.
  2. Sauté the shiitake mushrooms in a pan with 1 teaspoon of sesame oil and 1 teaspoon of soy sauce for about 3-4 minutes.
  3. Repeat for each vegetable, cooking them in 1 teaspoon of sesame oil and soy sauce until just tender.
  4. Marinate the sliced beef with baking soda, garlic, soy sauce, and sriracha for 15 minutes.
  5. Heat 1 tablespoon of sesame oil and cook the marinated beef for 2-3 minutes or until no longer pink.
  6. Fry an egg in the same pan until the edges are crispy and yolk runny, about 3-4 minutes.
  7. Assemble the dish by scooping rice into bowls and topping with sautéed vegetables, beef, and a fried egg.
