Step-by-Step Instructions for Chicken Avocado Melt Sandwich
  1. Season the boneless skinless chicken breasts generously with salt and pepper on both sides. Let the chicken sit for about 10 minutes.
  2. In a skillet, heat a tablespoon of olive oil over medium-high heat. Add the chicken and cook for 6-7 minutes on each side until golden brown and cooked through. Transfer to a plate and let rest.
  3. Slice your ripe avocado, cheese, red onion, and tomato. Arrange slices for easy access.
  4. Spread mayonnaise on one side of each bread slice and Dijon mustard on the other side.
