Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Soak the dried corn husks in warm water for about 20 minutes until pliable, then cut them into 4-inch squares.
  3. Oil a muffin pan and line each cup with the corn husk squares.
  4. In a mixing bowl, combine the Jiffy cornbread mix, egg, and milk until smooth.
  5. In another bowl, blend the cream cheese, jalapenos, green onions, and cheddar cheese until creamy.
  6. Spoon 2 tablespoons of the cornbread mixture into each husk, add 2 tablespoons of filling, and sprinkle crumbled bacon on top.
  7. Bake for 15 to 20 minutes until golden brown and risen.
  8. Once baked, let them cool for a few minutes before serving warm.
