Method
 

Step-by-Step Instructions
  1. Bring a large pot of salted water to a rolling boil. Add pasta and cook according to package instructions, typically 8-10 minutes. Drain, reserving about a cup of pasta water.
  2. Crumble the drained tofu into small pieces.
  3. Heat olive oil in a skillet over medium-high heat. Sauté garlic for about 2 minutes until fragrant.
  4. Add chopped bell pepper, cooking for approximately 5 minutes until softened.
  5. Incorporate crumbled tofu, smoked paprika, salt, and pepper. Sauté for another 5 minutes.
  6. Stir in fresh spinach and desired amount of tomato sauce. Allow to simmer for 5 minutes.
  7. Add the drained pasta to the skillet and toss to combine, adding reserved pasta water if needed.
  8. Serve in bowls, garnished with parsley or basil and vegan cheese if desired.
