- Bring a large pot of salted water to a rolling boil. Add pasta and cook according to package instructions, typically 8-10 minutes. Drain, reserving about a cup of pasta water.
- Crumble the drained tofu into small pieces.
- Heat olive oil in a skillet over medium-high heat. Sauté garlic for about 2 minutes until fragrant.
- Add chopped bell pepper, cooking for approximately 5 minutes until softened.
- Incorporate crumbled tofu, smoked paprika, salt, and pepper. Sauté for another 5 minutes.
- Stir in fresh spinach and desired amount of tomato sauce. Allow to simmer for 5 minutes.
- Add the drained pasta to the skillet and toss to combine, adding reserved pasta water if needed.
- Serve in bowls, garnished with parsley or basil and vegan cheese if desired.
