Ingredients
  

For the Shrimp
  • 1 pound large shrimp, peeled and deveined Best texture
  • 2 tablespoons olive oil For marinating

  • 1 teaspoon garlic powder Fresh garlic can be used
  • 1 teaspoon salt Essential seasoning
  • 1 teaspoon black pepper Essential seasoning
  • 1/4 teaspoon cayenne pepper Optional for heat
For the Corn Salsa
  • 2 cups fresh corn Can use canned or frozen
  • 1/2 cup red onion, diced Can use green onion
  • 1 medium jalapeño, minced Optional heat
  • 1/4 cup cilantro, chopped Can substitute with parsley
  • 2 tablespoons lime juice Fresh is preferred
For the Creamy Garlic Sauce
  • 1/2 cup mayonnaise Substitute with Greek yogurt for lighter option
  • 1/2 cup sour cream Greek yogurt works too
  • 2 tablespoons lemon juice Always use fresh
For Garnish
  • 2 tablespoons sesame seeds Lightly toasted

Method
 

Instructions
  1. In a mixing bowl, combine shrimp with olive oil, paprika, garlic powder, salt, black pepper, and cayenne pepper. Mix well and marinate for at least 15 minutes.
  2. In a separate bowl, mix fresh corn, diced red onion, minced jalapeño, chopped cilantro, and lime juice. Season with salt and set aside.
  3. Preheat grill to medium heat. Grill marinated shrimp for about 2-3 minutes per side until pink and opaque.
  4. In a small bowl, whisk together mayonnaise, sour cream, chopped cilantro, lemon juice, and season with salt and pepper.
  5. To assemble, layer corn salsa at the bottom of each bowl, add grilled shrimp, sliced avocado, drizzle with creamy garlic sauce, and garnish with sesame seeds and green onions.
