  • 1000 ml Water Essential for cooking the tapioca.
  • 300 g Watermelon Brings sweetness and freshness; try mango or cantaloupe for a unique twist.
For Assembly
  • 50 g Ice Water Use this to cool the cooked tapioca.
  • 100 g Additional Watermelon Cut into cubes for layering.

Method
 

Cooking and Assembly Steps
  1. Boil 1000ml of water in a medium-sized pot over high heat.
  2. Stir in the tapioca pearls, lower the heat, and cover. Cook for 15-18 minutes.
  3. Turn off the heat and let sit covered for another 10-15 minutes.
  4. Prepare an ice water bath and drain the cooked tapioca, immersing it in the ice water for 3 minutes.
  5. Cut 100g of watermelon into 1cm cubes and set aside.
  6. Blend the remaining 300g of watermelon with 400ml of coconut milk for about 40 seconds.
  7. Layer cups with watermelon cubes, followed by 2 tablespoons of cooked tapioca pearls, and pour blended mixture over top.
  8. Sprinkle additional watermelon cubes on top before serving.
