  1. Start by draining the ricotta cheese in a fine-mesh strainer for at least 30 minutes.
  2. Whisk together the flour, baking powder, salt, cinnamon, and nutmeg in a medium bowl.
  3. Beat the softened butter and sugar together until light and fluffy, about 3-4 minutes.
  4. Gradually add the eggs to the creamed mixture, mixing in one at a time, then blend in the drained ricotta, vanilla extract, and orange zest.
  5. Gently fold the dry ingredients into the wet ingredients in three additions.
