- In a medium saucepan, combine water, honey or maple syrup, molasses, fresh ginger, and cinnamon sticks. Bring to a boil over medium heat, stirring until honey dissolves. Remove from heat, stir in vanilla extract, and let cool before straining.
- Rim your glass by dipping it in gingerbread syrup, then in the cinnamon and sugar mixture. Set aside.
- Fill the rimmed glass with ice. Pour in vodka, Kahlúa, and gingerbread syrup. Stir gently until combined.
- Layer heavy cream carefully on top by pouring it slowly over the back of a spoon.
- Sprinkle ground cinnamon over the cream and add a mini gingerbread cookie for garnish.
