For the Salad

Method
 

Step-by-Step Instructions
  1. In a large pot, bring salted water to a boil. Add the pasta and cook until al dente, about 7 to 9 minutes. Drain and rinse under cold water.
  2. Prepare the corn by cutting kernels off a fresh cob, or drain frozen or canned corn.
  3. In a mixing bowl, whisk together mayonnaise, sour cream, lime juice, chili powder, smoked paprika, garlic powder, and season with salt and pepper until smooth.
  4. In a serving bowl, combine cooked pasta, corn, cherry tomatoes, red onion, and cilantro. Sprinkle with cotija cheese and gently mix.
  5. Pour the dressing over the pasta mixture and toss gently to coat evenly.
  6. Cover and chill in the refrigerator for at least 30 minutes before serving.
