- Preheat your oven to 425°F (220°C). Spray a muffin tin with cooking spray or oil.
- If using frozen hash browns, thaw them then squeeze out excess moisture. Season with salt and pepper.
- Press about 2 tablespoons of hash brown mixture into the bottom and sides of each muffin cup.
- Bake for about 20 minutes until golden brown and crispy.
- Let hash brown cups cool for a couple of minutes, then crack an egg into each cup.
- Bake again for 12-15 minutes until the eggs are set but slightly soft in the center.
- Let cool for 5 minutes, then gently lift each basket out and serve warm.
