Method
 

Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C). Spray a muffin tin with cooking spray or oil.
  2. If using frozen hash browns, thaw them then squeeze out excess moisture. Season with salt and pepper.
  3. Press about 2 tablespoons of hash brown mixture into the bottom and sides of each muffin cup.
  4. Bake for about 20 minutes until golden brown and crispy.
  5. Let hash brown cups cool for a couple of minutes, then crack an egg into each cup.
  6. Bake again for 12-15 minutes until the eggs are set but slightly soft in the center.
  7. Let cool for 5 minutes, then gently lift each basket out and serve warm.
