  • 2 pounds Beef Chuck Roast or pork shoulder or tofu
  • 1/2 cup Soy Sauce for marinade
  • 1 tablespoon Fresh Ginger minced
  • 4 cloves Garlic minced
  • 2 tablespoons Gochujang adjust for spice level
For the Slaw
  • 4 cups Cabbage shredded
  • 1/4 cup Rice Vinegar lime juice can be substituted
For Serving
  • 8 pieces Tortillas or soft bao buns
  • Optional Toppings such as avocado slices, pickled red onions, or sriracha

Method
 

Cooking Steps
  1. Sear the beef in a skillet over medium-high heat for about 4–5 minutes on each side.
  2. Prepare the marinade by mixing soy sauce, ginger, garlic, and gochujang in a bowl and pour over the seared beef in the crockpot.
  3. Slow cook the beef on low for 8 hours or high for 4 hours until fork-tender.
  4. Prepare the gochujang slaw by mixing cabbage, rice vinegar, and gochujang in a bowl; refrigerate for at least 30 minutes.
  5. Shred the beef into bite-sized pieces and return to the crockpot to absorb the juices.
  6. Assemble the tacos by warming the tortillas and adding the beef and slaw.
  7. Add optional toppings like avocado, pickled onions, or sriracha before serving.
