- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large mixing bowl, combine ground beef, ground pork, egg, mayonnaise, crushed pork rinds, Parmesan cheese, black pepper, and salt. Mix well.
- Shape the mixture into 1.5 oz meatballs, about 42 meatballs total. Place onto the prepared baking sheet, spaced evenly.
- Bake for 12-15 minutes, until browned and cooked through, with a meat thermometer reading of 160°F.
- In the slow cooker, combine chili sauce and sugar-free jam. Stir well.
- Transfer the baked meatballs into the sauce in the slow cooker. Stir to coat evenly.
- Cover the slow cooker and cook on high for 2-3 hours or low for 8 hours.
- After cooking, stir the meatballs in the sauce again and serve over cauliflower rice or alone.
