Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine ground beef, ground pork, egg, mayonnaise, crushed pork rinds, Parmesan cheese, black pepper, and salt. Mix well.
  3. Shape the mixture into 1.5 oz meatballs, about 42 meatballs total. Place onto the prepared baking sheet, spaced evenly.
  4. Bake for 12-15 minutes, until browned and cooked through, with a meat thermometer reading of 160°F.
  5. In the slow cooker, combine chili sauce and sugar-free jam. Stir well.
  6. Transfer the baked meatballs into the sauce in the slow cooker. Stir to coat evenly.
  7. Cover the slow cooker and cook on high for 2-3 hours or low for 8 hours.
  8. After cooking, stir the meatballs in the sauce again and serve over cauliflower rice or alone.
