Step-by-Step Instructions
  1. Sear the Beef: Heat a large skillet over medium-high heat. Add oil and brown the chuck roast chunks for 3-4 minutes per side. Transfer the beef to the slow cooker.
  2. Prepare the Slow Cooker: Place the seared beef in the slow cooker. Add garlic butter and pour in broth, ensuring it covers the beef.
  3. Add Potatoes: Cut potatoes into chunks and add half to the slow cooker. If firmer potatoes are desired, wait and add the remaining half during the last 2 hours of cooking.
  4. Cook It Low and Slow: Set the slow cooker to LOW for 7-8 hours or HIGH for 4-5 hours. Check for doneness at the end; beef should be fork-tender and reach 200°F.
