  • 1 cup Feta Cheese extra for topping
  • 1 tbsp Italian Seasoning or dried basil and oregano
For the Peppers
  • 4 Bell Peppers mixed colors for presentation
For Baking
  • 1/2 cup Water to steam the peppers
For Garnishing
  • 2 Lemon Wedges for serving
  • 1 tbsp Fresh Dill or parsley

Method
 

Step-by-Step Instructions
  1. Prepare the Rice by cooking the white rice according to package instructions.
  2. Preheat your oven to 350°F (175°C).
  3. Prepare the Peppers by halving them and removing seeds, placing cut-side up in a baking dish.
  4. Cook the Chicken in a skillet with olive oil, salt and pepper until browned, about 5-7 minutes.
  5. Add Flavorful Ingredients: stir in Italian seasoning, red onion, garlic, and zucchini; sauté for 2-3 minutes.
  6. Combine the Mixture by mixing cooked rice with the chicken and vegetables, adding tomatoes, olives, feta, and dill.
  7. Stuff the Peppers with the mixture, pressing down gently, and sprinkle additional feta and dill on top.
  8. Bake the Peppers with water in the dish covered with foil for 40-45 minutes until tender.
  9. Serve and Garnish the peppers warm with lemon wedges and optional tzatziki sauce.
