- Prepare the Rice by cooking the white rice according to package instructions.
- Preheat your oven to 350°F (175°C).
- Prepare the Peppers by halving them and removing seeds, placing cut-side up in a baking dish.
- Cook the Chicken in a skillet with olive oil, salt and pepper until browned, about 5-7 minutes.
- Add Flavorful Ingredients: stir in Italian seasoning, red onion, garlic, and zucchini; sauté for 2-3 minutes.
- Combine the Mixture by mixing cooked rice with the chicken and vegetables, adding tomatoes, olives, feta, and dill.
- Stuff the Peppers with the mixture, pressing down gently, and sprinkle additional feta and dill on top.
- Bake the Peppers with water in the dish covered with foil for 40-45 minutes until tender.
