  • 1 Avocado mashed
For the Dressing
  • 2 tablespoons Nutritional Yeast
  • 2 tablespoons Lemon Juice
For Assembly
  • 4 slices Bread hearty variety like sprouted
  • 1/2 cup Hummus your favorite flavor
  • 2 cups Spinach fresh, for layering
  • 1 tablespoon Mustard for spreading

Preparation

  4. Assemble the sandwich by spreading hummus on one slice of bread, layering spinach on top, followed by the chickpea salad mixture. Top with a second slice of bread spread with mustard.
