  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lemon juice or lime juice
  • 3 cloves fresh garlic minced
  • 1 tablespoon oregano or Italian seasoning
  • 1 teaspoon paprika smoky preferred
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes to taste
Fresh Salsa Ingredients
  • 1 cup cucumbers diced
  • 1 cup tomatoes diced
  • 1/2 cup red onion diced
  • 1/4 cup parsley chopped
For Assembly
  • 4 pieces soft pita bread whole wheat or gluten-free options
  • 1 cup tzatziki store-bought or homemade

Method
 

Marinating and Preparation
  1. In a mixing bowl, combine olive oil, lemon juice, minced garlic, oregano, paprika, salt, pepper, and red pepper flakes. Whisk until well blended. Cut the chicken into strips and coat completely in the marinade. Let it sit for at least 15 minutes.
  2. In another bowl, combine diced cucumbers, tomatoes, bell pepper, red onion, and parsley. Drizzle with lemon juice and season with salt and pepper. Stir gently and let sit for 10-15 minutes.
Cooking and Assembly
  1. Heat a skillet over medium-high heat. Add the marinated chicken in a single layer and cook for about 3-5 minutes until golden. Flip and cook for another 3-5 minutes until internal temperature reaches 165°F. Let the chicken rest.
  2. Warm the pitas in the skillet or oven at 350°F for about 5 minutes. Assemble the tacos by placing chicken strips in the pitas, topping with fresh salsa, and drizzling with tzatziki.
