- Preheat a large skillet or grill pan over medium heat for 3–5 minutes.

- Toss zucchini, red bell pepper, and red onion with olive oil, salt, pepper, and oregano. Sauté for 3–4 minutes until softened.

- Place one tortilla on the skillet and sprinkle half of the mozzarella over it.

- Layer the sautéed vegetables, sun-dried tomatoes, olives, and feta on top, adding spinach if desired.

- Sprinkle the remaining mozzarella over the vegetable filling and top with a second tortilla. Press down gently.

- Cook for 2–3 minutes until golden brown and cheese bubbles, then flip and cook for another 2–3 minutes.

- Remove from skillet, let rest for a minute, and slice into wedges. Serve warm with tzatziki or hummus.
