Method
 

Step-by-Step Instructions
  1. Wash the medium-sized zucchinis and slice off the ends. Cut each zucchini lengthwise into 1/2-inch thick strips and sprinkle salt generously over them. Let rest for about 20 minutes.
  2. Pat each zucchini slice dry gently with a clean kitchen towel or paper towels to prevent waterlogging during cooking. Set aside.
  3. Preheat your grill to medium-high heat, around 375°F to 400°F. Brush both sides of each zucchini slice with olive oil or avocado oil.
  4. Carefully place the zucchini slices on the grill and grill for about 10-15 minutes, flipping halfway through to achieve even cooking and golden grill marks.
  5. Remove the grilled zucchini from the grill and transfer them to a serving platter. While warm, crumble fresh goat cheese over the top and sprinkle with fresh basil and drizzle honey.
