Step-by-Step Instructions for Classic French Beef Stew
  1. Heat the oil in a large Dutch oven over medium-high heat. Add beef chuck roast, sear for 4-5 minutes on each side until browned.
  2. Remove beef and sauté pearl onions and carrots for about 5 minutes. Add garlic and tomato paste, cooking for an additional minute.
  3. Deglaze pot with red wine, scraping the bottom for browned bits. Simmer for about 3 minutes.
  4. Return beef to pot, add beef broth, and bring to a boil then reduce heat to low for a gentle simmer.
  5. Cover and let simmer for 2 to 2.5 hours, stirring occasionally until the beef is fork-tender.
