- In a medium pot, heat 2 tablespoons of oil over medium heat until it shimmers.
- Add 1 tablespoon of freshly grated ginger and 3 minced garlic cloves, sauté for about 2 minutes.
- Increase heat to medium-high, add 1 pound of lean ground beef, and cook for approximately 5 minutes.
- Stir in 2 tablespoons of tomato paste, cooking it for about 2 minutes.
- Pour in 4 cups of low-sodium chicken stock, 1 tablespoon of sugar, 1 teaspoon of salt, ½ teaspoon of ground white pepper, and 1 tablespoon of white vinegar.
- Add 8 ounces of enoki mushrooms and the white parts of 2 sliced scallions, simmer gently for at least 15 minutes.
- Ladle the soup into bowls and garnish with the green parts of the scallions.
