For Toppings
  • 2 scallions Scallions White parts in the soup, green tops for garnish.
  • 8 ounces Enoki Mushrooms The star ingredient; can use shiitake or button mushrooms.

Method
 

Cooking Instructions
  1. In a medium pot, heat 2 tablespoons of oil over medium heat until it shimmers.
  2. Add 1 tablespoon of freshly grated ginger and 3 minced garlic cloves, sauté for about 2 minutes.
  3. Increase heat to medium-high, add 1 pound of lean ground beef, and cook for approximately 5 minutes.
  4. Stir in 2 tablespoons of tomato paste, cooking it for about 2 minutes.
  5. Pour in 4 cups of low-sodium chicken stock, 1 tablespoon of sugar, 1 teaspoon of salt, ½ teaspoon of ground white pepper, and 1 tablespoon of white vinegar.
  6. Add 8 ounces of enoki mushrooms and the white parts of 2 sliced scallions, simmer gently for at least 15 minutes.
  7. Ladle the soup into bowls and garnish with the green parts of the scallions.
