- Heat 2 tablespoons of olive oil in a large pot over medium heat until it shimmers.
- Add 1 diced onion and sauté for 10-15 minutes until golden brown and caramelized.
- Stir in 3 minced garlic cloves, a pinch of salt and pepper, and cook for 1-2 minutes.
- Add 8 ounces of sliced mushrooms and sauté for 5-7 minutes until softened.
- Pour in 4 cups of vegetable broth and bring to a boil, about 5 minutes.
- Add 4 cups of chopped kale, lower heat, and simmer for 20 minutes.
- Stir in 1 cup of full-fat coconut milk and heat for another 2-3 minutes.
