  • 3 cloves Garlic Fresh garlic is ideal, but garlic powder can be used in a pinch (about 1/8 tsp per clove).
  • 8 ounces Mushrooms Choose varieties like shiitake or cremini; fresh mushrooms are best.
  • 4 cups Vegetable Broth Select low-sodium broth for better control over saltiness.
  • 4 cups Kale You can substitute with spinach for a milder taste.
  • 1 cup Coconut Milk For a richer mouthfeel, go for full-fat coconut milk.
Optional Toppings
  • Fresh Herbs Adjust based on your flavor preference.
  • Red Pepper Flakes Add a pinch and adjust to taste.

Method
 

Cooking Instructions
  1. Heat 2 tablespoons of olive oil in a large pot over medium heat until it shimmers.
  2. Add 1 diced onion and sauté for 10-15 minutes until golden brown and caramelized.
  3. Stir in 3 minced garlic cloves, a pinch of salt and pepper, and cook for 1-2 minutes.
  4. Add 8 ounces of sliced mushrooms and sauté for 5-7 minutes until softened.
  5. Pour in 4 cups of vegetable broth and bring to a boil, about 5 minutes.
  6. Add 4 cups of chopped kale, lower heat, and simmer for 20 minutes.
  7. Stir in 1 cup of full-fat coconut milk and heat for another 2-3 minutes.
