Step-by-Step Instructions for Cheesecake Factory Brown Bread
  1. In a small bowl, combine warm water, instant dry yeast, and sugar. Stir gently and let it sit for 3-5 minutes until frothy.
  2. In a large mixing bowl, whisk together bread flour, whole wheat flour, brown sugar, cocoa powder, and salt.
  3. Pour the yeast mixture into the bowl with dry ingredients. Add canola oil, honey, and molasses. Mix until combined and sticky.
  4. Transfer the dough onto a floured surface and knead for about 5 minutes until smooth and elastic.
  5. Shape the dough into a ball and spray lightly with cooking spray. Let it rise in a warm area for 1-1.5 hours.
  6. Punch down the dough, divide it into four pieces, and roll each into a log shape. Place on a baking sheet dusted with cornmeal.
  7. Cover the loaves with a towel and let them rise for another 30-40 minutes.
  8. Preheat the oven to 350°F (175°C) and place an empty baking sheet on the lower rack.
  9. Just before baking, toss a few ice cubes onto the empty baking sheet.
