  • 1 tablespoon Olive Oil For cooking.

  • 1 teaspoon Smoked Paprika Can substitute with regular paprika.
  • 1 teaspoon Salt

  • 1 large Bell Pepper Any color.
  • 1 large Onion
For the Base
  • 2 cups Brown Rice Can substitute with white rice, quinoa, or cauliflower rice.
  • 1 can Black Beans Drained.
  • 1 cup Corn Kernels Fresh, frozen, or canned.
For the Toppings
  • 1/4 cup Fresh Cilantro Omit if not preferred.
  • 1/2 cup Greek Yogurt Can substitute with sour cream or avocado.
  • 1 tablespoon Lime Juice

Method
 

Step-by-Step Instructions
  1. Heat a large skillet or grill pan over medium-high heat for about 5 minutes.
  2. Season both sides of flank steak with chili powder, cumin, garlic powder, smoked paprika, salt, pepper, and onion powder.
  3. Drizzle in a tablespoon of olive oil in the hot skillet.
  4. Place the seasoned flank steak in the skillet and cook for 4-5 minutes per side.
  5. Remove steak from skillet and let it rest on a cutting board for about 5 minutes.
  6. In the same skillet, add sliced bell peppers and onions, cooking for 3-4 minutes.
  7. Slice the flank steak against the grain into thin strips.
  8. Warm up brown rice, black beans, and corn as needed.
  9. Scoop a generous portion of the warm rice mixture into bowls, top with sautéed vegetables and sliced steak.
  10. Add Greek yogurt, sprinkle fresh cilantro, and squeeze lime juice over the top.
