Step-by-Step Instructions
  1. In a small bowl, dissolve the active dry yeast and granulated sugar in warm water. Allow it to sit until frothy (5-10 minutes).
  2. In a large bowl, combine all-purpose flour and kosher salt. Stir in the yeast mixture and egg yolk, then knead in butter until dough is soft and elastic (5-7 minutes).
  3. Place kneaded dough in an oiled bowl, cover with a towel, and let it rise in a warm spot until doubled in size (about 1 hour).
  4. Punch down the dough, roll out into a rectangle, brush with melted butter, and sprinkle with Parmesan, mozzarella, oregano, and garlic salt. Press toppings into dough.
  5. Fold the dough in half to encase the filling; brush the top with melted butter and slice into strips with a pizza cutter.
  6. Preheat oven to 375°F (190°C). Bake cheese sticks on a parchment-lined baking sheet for 15-18 minutes until golden brown.
