Method
 

Instructions
  1. Whisk together almond milk, chia seeds, maple syrup, and vanilla extract in a mixing bowl. Let sit for about 5 minutes.
  2. Dissolve instant coffee granules in warm water, then combine with the chia mixture and whisk thoroughly.
  3. Blend cocoa powder with almond milk to create a smooth paste, then fold this into half of the chia mixture.
  4. Layer the mixtures in serving glasses, starting with the plain chia mixture and alternating layers.
  5. Top each serving with Greek yogurt, cocoa powder, and dark chocolate shavings.
  6. Cover and chill for at least 2-4 hours or overnight.
  7. Serve chilled, garnished with crushed coffee beans.
