- Toast pecans by melting 2 tbsp of butter in a skillet over medium heat. Add 2 cups of chopped pecans and stir for about 5 minutes until fragrant and lightly browned.
- In a large saucepan, melt 1 cup of unsalted butter over medium-high heat.
- Combine 1 cup of granulated sugar and 1 cup of packed brown sugar with the melted butter, stirring until fully combined.
- Add 1 1/8 cups of heavy whipping cream, 1/4 tsp of salt, and 1 tbsp of vanilla extract. Mix thoroughly.
- Bring the mixture to a rolling boil and let it boil for 4 minutes while stirring occasionally.
- Remove from heat and whisk in 4 cups of sifted powdered sugar until smooth.
- Fold in the toasted pecans until evenly distributed.
- Pour the fudge into a lined baking dish and smooth the top. Allow to set for at least 3 hours.
- Once set, cut the fudge into 1-inch squares and serve.
