Step-by-Step Instructions
  1. Gather all ingredients for the Chile Colorado and add diced onion, garlic, green chiles, chipotle adobo sauce, tomato paste, beef broth, apple cider vinegar, chili powder, oregano, cumin, and salt to the slow cooker. Mix well.
  2. Add cubed beef stew meat to the slow cooker and gently stir to coat the beef with the sauce.
  3. Cover and set the slow cooker on low for 7–8 hours until the beef is tender.
  4. Once cooked, give the Chile Colorado a gentle stir and serve hot in bowls or on warm tortillas with sides of rice or beans if desired.
