Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C). Spread the pecans on a baking sheet and toast for 8-10 minutes.
  2. Melt 1 stick of unsalted butter in a microwave-safe bowl, then add light brown sugar, granulated sugar, light corn syrup, and sweetened condensed milk. Stir to combine.
  3. Microwave the caramel mixture on high for about 6 minutes, stirring halfway through.
  4. Add pure vanilla extract to the caramel mixture, then fold in toasted pecans.
  5. Transfer the pecan-caramel mixture to a shallow dish and let it cool for a few minutes. Refrigerate for at least 30 minutes.
  6. Melt your choice of chocolate in a microwave-safe bowl, stirring every 30 seconds until smooth.
  7. Scoop portions of the chilled pecan-caramel mixture and shape into turtles. Dip each turtle into the melted chocolate.
  8. Place the chocolate-coated turtles on waxed paper to cool until the chocolate sets.
